Seafood is plentiful on the Gulf of Siam and much of the bounty finds
it's way to the US. Fresh water fish and shellfish abound in
Thailand. One of our favourites are the gorgeous huge Fresh Water Prawns
that are packed 6 in a one pound box and frozen. Before cooking the
shells are a colourful blue and orange. They resemble a small blue
lobster.

They cook quickly and are so succulent and sweet. Usually these prawns
are well priced at $5.98# or less, which makes for a very affordable meal.
American fresh water prawns or the ever popular Tiger Prawns also will
work necely for this recipe, however the large Thai Fresh Water Prawns are
quite dramatic when plated on a bed of greens.
