I learned to make this recipe years ago from a Thai-Laos friend named Kei who was the chef-owner of a wonderful restaurant called Santhorn in Oakland, California, which unfortunately closed as he pursued other business interests.

This dish is true comfort food and especially nice for a late night Supper after a night of partying. You can vary the ingredients depending on the meat, fowl, or seafood and vegetables you have on hand, and you can spice it up or down depending on your taste for chiles.
