Greetings from the sunny Land of Oz!

The heat that I felt on my recent visit to Texas made me grateful for refrigeration. Where would we be without it?

Years ago, there was little refrigeration in the world. People couldn't just cool their food to inhibit the growth of the bacteria that causes food to spoil. Food needed to be preserved in ways that allowed people to eat, even when it wasn't possible to grow crops. Brining and pickling were widely used. Sauerkraut was a way to preserve cabbage.

Although many people in the world now have refrigeration, there is still a place for sauerkraut in our diets. Filled with vitamin C and healthy microbes, sauerkraut takes leftover roast beef and elevates it into a superb sandwich.

Don't forget the grilling! This makes it a truly exceptional sandwich.
