One of my favourite Thai appetizers is the fragrant and flavourful Chicken Wrapped in Pandanus Leaves (Gai Hoh Bai Toey). Pandanus leaves are also called Screw Pine and are available fresh or frozen in Asian Markets.

Pandanus Leaves give a fragrant, sweet, smoky flavour to the chicken bundles which are deep fried. Gai Hoh Bai Toey makes an excellent appetizer or part of a Thai dinner menu.
