The other day in the forum we were talking about tortillas. One reader expressed interest, so I got busy and here is a recipe that gives a nod to a burrito that I tasted forty years ago. It was a homemade flour tortilla filled with potatoes and hamburger. I thought that was a strange way to fill a tortilla, but I ate it. What an eye-opener that was!

Do you think of burritos as cardboard flour tortillas, filled with beans, meat, and cheese? Then, this potato, onion, and hamburger burrito on a lovely home-style tortilla from a Mexican bakery will be a gustatory revelation for you!
