Now that summer is here I love to make inger foods for friends and family to enjoy outdoors. My barbcue has a side burner which is perfect for deep frying.
One of my all time favourite Thai appetizers is Gai Hob Bai Toey (Chicken Wrapped In Pandanus Leaf). It is a very popular street food all over Thailand. The key is to use fresh or frozen Pandanus Leaves. They are so fragrant and there is no substitute for these leaves.
This a perfect party food. Just marinade the chicken over night to develop the flavours. Don't be put off by the fact that Gai Hob Bai Toey are deep fried as the pandanus leaves prevent the chicken from absorbing any oil. The chicken is succulent and vey tender with just the right amount of crispiness on the outside.

Pandanus Leaves give a fragrant, sweet, smoky flavour to the chicken bundles which are deep fried. Gai Hob Bai Toey makes an excellent appetizer or part of a Thai dinner menu.
