Summer Squash Salad Recipe
Greetings from the Land of OZ!
The Farmers' Market has had so many varieties of squash lately. I found myself with an abundance of zucchini, crookneck, and the cutest little yellow and green variegated patty pan squash. I also needed to make a salad for a potluck. Well, it was fortunate that I had all of those squash, because I came up with a yummy salad recipe that I want to share with you this week.
The hot, lazy days of summer bring out the best in a squash plant. Filled with flavor, this colorful Summer Squash Salad pairs well with any Italian-type sandwich. Take it to a summer potluck, or make it in the winter to remember the heat of the summer sun and the lazy days of summer squash.

What summer salads do you enjoy? A friend of mine (also named Connie) made tomatoes with fresh mozzarella, and basil leaves. Honestly, if I had been left alone with that salad tray, I would have fallen face down in it and scarfed the whole bunch of those tomato slices right up! Have you ever made tomatoes like that?
