During the recent heat wave I was doing most cooking on the barbecue. I
was pondering what to make for dinner on this sweltering evening and
noticed the very ripe pineapple sulking on the counter. Hummmm
pineapple and pork tenderloin? Then I remembered I had some lovely
shrimp in the freezer and they defrost in minutes in cold weather. The creating began for this taste tempting dish.
I recently started using quinoa in place of the usual rice and decided
to integrate the quinoa with the grilled and pineapple. I love seafood
with Saffran and decided to add it to this fusion meal using Thai-Spanish-French-Aztec ingredients.
One of the side benefits of this so easy and tasty meal is that the cold
leftovers make an awesome lunch for the next day.
Lemongrass Shrimp & Saffron Quinoa with Grilled Pineapple
The marriage of flavours of quinoa, saffron, garlic, spicy chiles,
shrimp, and the sweetness of the pineapple work beautifully. This meal
is ready in less than 30 minutes and there is only one pan to wash!
