This is one of our family favourites for summer meals. It is wonderful to eat out of hand out of Boston Bibb lettuce leaves. Make the salad the day before sans the shrimp and tomatoes to allow the flavours to develop. Just mix in sweet fresh bay shrimp and diced heirloom tomatoes just before serving.

Curried Macaroni Salad with fresh Shrimp
This Thai influenced summer salad is wonderful with fresh sweet salad shrimp and the accent flavour pleaser of curry.
