Meatloaf Sandwich Recipe

Greetings from the Land of OZ!

This morning, I am typing with one hand, and eating a meatloaf sandwich with the other. You know that I'm trying not to get meatloaf goo all over my keyboard!

When the hot days of summer are over, I can fire up the oven and start cooking. As a child I always hoped we would have enough meatloaf left over for sandwiches. Since I'm the cook, I can guarantee the leftovers! Meatloaf sandwiches are one of the tastiest easy meals that you can make. Pair them with soup, salad or a side dish for a nutritious meal.

This is an easy recipe. One difference that this has from other recipes is that I precook the vegetables. Then, they blend into the meatloaf and add wonderful flavor. What if you don't like hunks of vegetables? NO problem! Use onion powder or flakes, a bit of paprika, and celery seed. That gives you the flavor without the vegetables. The meatloaf without the veggies is more dense. It also makes fabulous sandwiches!

If you get adventurous and want meatball sandwiches, just roll the meatloaf mixture into balls, and bake them on a cookie sheet for about 20 minutes. Then, pop them into your favorite spaghetti sauce and heat for about 15 minutes. The cooking times are approximate, since I don't know what size that you like those meatballs. Slice the largest one open and make sure that they are cooked through. Serve them on an Italian roll, or you could use your leftover hot dog buns.
