Chicken Sausage Herb and Potato Soup Recipe
Greetings from the Land of OZ!
It's always sad when I am feeling under the weather and have to miss work. Today, I have about enough energy to post my article and send a newsletter. Then, it's back to bed for me! Fortunately, I had some of this soup yesterday. It tasted sooooo good. Maybe my husband will pamper me and make some more tasty soup today. The recipe is simple! Of course, you can use what you have in your fridge and substitute to suit your taste and creativity. I used the last of the sausage, so perhaps we'll use tiny shrimp or go vegetarian.
I could have named this soup "Creamy Warm Comfort Soup," since it is all of those things. Serve this soup with grilled cheese sandwiches. Use a hearty sourdough or rye bread grilled in extra virgin olive oil. You can also grill shredded cheese or thinly sliced veggies in a fresh flour tortilla.
