Sautéed Mixed Greens Recipe
Greetings from the Land of OZ!
We woke up this morning to an unexpected layer of white on the ground. The roads are a mess! But we are blessed with a warm house and enough good food to eat. There are many in the world who are not so fortunate.
As a child, I grew up in poverty. Not the poverty of spirit, but we had very little money. One of my favorite meals was turnips and greens with cornbread. I loved the way that they tasted, but did not realize how they were filled with good nutrition. Today, my greens selection is a bit broader.
Easy to prepare, low in calories and carbs, greens are nutritional powerhouses! Greens, like bok choy, collards, mustards, turnips, and kale, typically are low in calories and carbohydrates. They are high in anti-oxidants, fiber, vitamins, and minerals. Plus, they taste great with a sandwich!
