Greetings from the Land of OZ!

Winter should be coming to an end, but you would never know it by the view from our window. We have a foot of snow here! It's more than we got all last winter. With the snow causing us to hunker down in our snug home, there's been time to look at side dishes to eat with our sandwiches. Yesterday, we had microwave baked yellow butternut squash with our tostadas. It just takes 10 minutes to cook the squash. Then, cut it in half, scoop the seeds for the critters, add a dab of butter or olive oil with salt and pepper. It really adds powerful nutrition to those tasty tostadas with guacamole!
