Moist Chicken Salad Recipe
Greetings from the Land of OZ!
Spring Break is finally here! Actually, in Kansas there seem to be two popular weeks for Spring Break. I get to enjoy the first week, but the rest of the family is going on Spring Break next week!
This week I'll make things easy for myself. There will be less cooking, but we'll still have good food. We have a batch of chicken salad that should last us a couple of days. Chicken salad is a great favorite any time of the year. It is versatile. Serve your sandwiches on crackers, grilled, or as wraps. You make it your way!
Since chicken salad so easily absorbs flavors, you can make it a different taste each time you serve it. Just take a cup of chicken salad and start playing with it!
-Add a tiny bit of freshly grated ginger and some curry powder for an Indian flavor.
-Chop some fresh dill and cucumber into it.
-Add some chopped pickled jalapeno slices for a spicy treat.
