I first encountered a chopped salad as part of an ethnic meal prepared for me by a grateful mom who wanted to thank me for giving her son a ride to school. These were wonderful meals filled with different tastes and textures! I've served a chopped salad many times since then. It is perfect when you are serving a sandwich that is made with a heavy roll. The low carb chopped salad balances out the higher carb roll.
