Peppery Grilled Corned Beef Sandwich Recipe
Greetings from the Land of OZ!
You can tell that Spring is here! The snow has melted. It's knee high beside my driveway, instead of chest high! These glorious warmer days just make my creative juices flow!
I love corned beef, but I usually have to cook my own to get a good product. A recent trip to Costco made me perk up. They had cooked and thin sliced corned beef in the refrigerator case. I decided that now would be a perfect time for a corned beef sandwich. (Is there ever a time that is not perfect for a corned beef sandwich?)
If you love to cook and have a lot of time, you can bake your own bread, cook your corned beef, thin-slice the cheese, and make a sauce from scratch. However, if you enjoy being a creative cook, but don't live a life of leisure, there are short-cuts that you can take to make creative sandwiches.
