I adore this butternut squash recipe, because the seasoning really adds oomph to the squash. It makes a lot of food, so that you just need to reheat through the week, if you cook ahead. Plus, it can be a side OR a sandwich. At the bottom of the article, I put a link to my favorite veggie roasting pan. When I was getting the link, I noticed that it is on sale for about $10. So, I bought 2 of them to give as gifts!

Roasted Seasoned Butternut Squash Recipe
This recipe makes a lot of food. You can use this as a side dish for a sandwich meal. Slide some Roasted Seasoned Butternut Squash into a pita or flour tortilla with shredded pepperjack cheese, slivered onions, and shredded lettuce. It's a tasty vegetarian sandwich delight with tzatziki sauce.
