Bacon Lettuce and Tomato Sandwich Recipe
Greetings from the stormy and humid Land of Oz!
We have had such extreme heat this summer that you would think that it would be perfect tomato weather. The nights have been too hot most of the time for the tomatoes to set fruit. The days have just been shriveling the plants. It is too sad. Summer always makes me think of tomatoes, and that leads me to the BLT.
When summer heat is driving you crazy, think about those little globes of red sunshine-tomatoes. Filled with juice, vitamin C, and acidic flavor, these fruits of the tomato vine make the heat of summer worth enduring. We all know that the summer tomato from the garden is a lot different from the cardboard tomatoes that you can buy in the store in the winter.
Slice some succulent tomatoes, bake up a batch of crispy bacon (yes, I said bake!), and add lettuce and mayo to some high quality bread, and you have what my mom used to call "good eatin'!" This is a great sandwich for breakfast, lunch, or dinner.
A Bacon Lettuce and Tomato Sandwich is one way to grab a bit of summer. Properly made, they are a food group all by themselves! Pay attention to the tomatoes and bacon, and you can’t go wrong by serving this iconic summer sandwich.
