Massaman Curry is one of the most popular of Thai curries, especially in the South of Thailand where the Muslims eat Beef Massaman. Around Bangkok and in the North of Thailand Chicken Massaman (Massaman Gai) is quite popular.

The Massaman paste gives this popular curry a vibrant mélange of flavours. It is far more complex than red, yellow or green curries as it incorporates some fragrant Indian spices. Take out that mortar and pestle and make up a batch of Massaman Curry Paste. The recipe was in last weeks' newsletter, but is easily found on my site.

Often times a side dish or condiment of cucumbers, red chiles, and shallots in vinegar, salt, sugar dressing called Ajad is served with the Massaman Gai.

Massaman Curry is a milder curry and perfect with chicken and sweet potatoes, especially if someone is not sure about fiery Thai curries.
