The cornerstone to any Irish celebration is corned beef and cabbage. Now on one hand I love this dish and could eat it weekly. On the other hand, it's important to realize this is completely NOT authentic and is a US invention, created in the poor neighborhoods of New York City. Still, it is delicious, so consider it a modern part of the celebration.

Turnips and Rutabagas
The Irish didn't grow potatoes because they wanted to. They grew potatoes because they were forced to work on land owned by the English, and were only allowed a tiny allowance from what they grew. If they could have owned their own land, they would have grown great varieties of vegetables and wouldn't have been so destroyed by the famine of their one crop.
