Pizza used to be a strictly Italian dish with red sauce, cheese, and toppings. Not so anymore; it seems that anything with a crust, some kind of sauce, and toppings qualifies as a pizza. The following Easy Reuben Pizza is not traditional, not at all Italian, and not a dish to be missed. The crisp crust is made quickly with Master Baking Mix , rye flour, and caraway seeds; it doesn’t need a mixer, and doesn’t need to be rolled out. Bottled thousand island dressing makes up the pizza sauce, which is topped with deli-sliced corned beef, sauerkraut, and Swiss cheese. Hands-on time is about 15 minutes; baking time is 25-30 minutes.

With this easy pizza, Reuben sandwich lovers can have the best of both worlds – flavors of the sandwich and the simplicity of easy-to-hold pizza wedges.

8 Servings

1 16 oz. jar sauerkraut
2 cups master baking mix
1/2 cup rye flour
1 teaspoon caraway seeds
1 cup hottest tap water

1 cup thousand island dressing
1 pound thinly sliced deli corned beef
1/2 pound sliced Swiss cheese
  1. Preheat oven to 400°.

  2. Spray a 12" pizza pan with non-stick spray.

  3. Place the sauerkraut in a colander, run cold water over to rinse, then drain well and with your hands, squeeze as much moisture as possible out; set aside.

  4. Mix the master baking mix, rye flour, and caraway seed.

  5. Stir in the hot water and mix until smooth.

  6. With lightly floured hands, press the dough evenly onto the prepared pizza pan, forming a ridge around the outside.

  7. Spread the thousand island dressing evenly over the crust.

  8. Layer the corned beef over the dressing, making sure all areas are well-covered.

  9. Spread the sauerkraut over the corned beef.

  10. Top with the cheese slices.

  11. Bake 25-30 minutes or until the cheese is bubbly and the crust is golden brown.
