Christmas Cookies Day 7 - Pressed Butter Cookies
If there’s a cookie press available, it’s a great way to make a lot of shaped cookies fast. Pressed Butter Cookies are especially quick, since they start with the versatile Basic Sugar Cookie Mix and are simply pressed onto an ungreased baking sheet with a twist of the press. A sprinkling of colored sugar makes the cookies look festive, so they’re a great addition to cookie trays.

Although the ingredients are simple and few, these cookies are always very popular; since they are small, everyone wants at least two or three. The cookie press makes it possible to make the cookies in several shapes, and the dough can be tinted green for trees, and red for poinsettias; just make sure it’s paste food coloring (available at craft stores and restaurant supplies) and not liquid drops so as not to change the texture of the dough. Colored sugars or sprinkles are available at most grocery stores, so the cookies can be easily decorated before baking. The cookies can also be sandwiched together with buttercream frosting or drizzled with frosting or chocolate. No matter which way they are served, these will become a favorite.

Makes about 4 dozen cookies depending on size

1/2 cup softened butter
3 cups Basic Sugar Cookie Mix
1 teaspoon vanilla
1 egg

Colored sugar or sprinkles
  1. Preheat oven to 400°.

  2. Mix the butter, sugar cookie mix, vanilla, and egg.

  3. Place in a cookie press and press onto clean, cool ungreased baking sheets.

  4. Sprinkle with colored sugar.
  5. Bake 5-6 minutes or until the edges just become lightly browned.
