4-Ingredient Casserole Recipes
Although most of us are busy, certain times of the year are especially busy, like right now! Unfortunately, we are still responsible for putting some kind of dinner on the table each night, and although fast food is fast, it’s expensive and not particularly tasty (not to mention full of preservatives and other garbage we don’t need). Kari’s 4-Ingredient Sloppy Joe Casserole or 4-Ingredient Memphis Pulled Pork BBQ Bake can be put together in less than 10 minutes and can bake while you accomplish other tasks. Both of these quick casseroles are yummy (according to the Official Hancock tasters and other friends), and qualify as good old-fashioned comfort food. Packaged salad or a microwaved vegetable make either a complete meal.

I often emphasize the value of preparing modules ahead and keeping them in the freezer, so hopefully, you have taken my advice and have either the Basic Pork Module or the
Basic Ground Beef Module in your freezer right now. If you don’t, neither take much hands-on time, so they can be cooking while you do other more important things.

Memphis Pulled Pork BBQ Bake



6-8 Servings

1 pound frozen tater tots
2 cups shredded pork from the Basic Pork Module
1 16 oz. can sloppy Joe sauce
2 cups shredded cheddar cheese
  1. Preheat oven to 350°.

  2. Spray a 9 x 13" shallow casserole dish with non-stick spray.

  3. Spread the tater tots evenly over the bottom of the prepared casserole dish.

  4. Mix the shredded pork with the sloppy Joe sauce; spread over the tater tots.

  5. Sprinkle the cheese on top.

  6. Bake about 30 minutes or until bubbly and the cheese is browned.

Kari's Sloppy Joe Bake



8 Servings


1 pound frozen tater tots
2 cups ground beef mixture from the Ground Beef Module, or 1 pound ground beef browned and seasoned with salt, pepper & garlic
1 16 oz. can Sloppy Joe sauce
2 cups shredded cheddar cheese
  1. Preheat oven to 350°.

  2. Spray a 9 x 13" shallow casserole dish with non-stick spray.

  3. Spread the tater tots evenly over the bottom of the prepared casserole dish.

  4. Mix the ground beef mixture with the Sloppy Joe mix; spread over the tater tots.

  5. Sprinkle the cheese on top.

  6. Bake about 30 minutes or until bubbly and the cheese is browned.
