Quick Rosemary Garlic Flatbread Recipe
Bread is a “must-have” accompaniment to soups, salads, or almost any lunch or dinner. Although there are many store-bought breads that are passable, and a few from specialty bakeries that are really good, the best breads by far are those made at home. Does anybody really have time to make bread anymore? Actually, you do! Quick Garlic Rosemary Flatbread is one of those cheat recipes, since the dough is already in the refrigerator in the form of jumbo refrigerator biscuits. In this recipe, they are rolled together into a large quazi-rectangle, brushed with olive oil, and sprinkled with garlic and fresh rosemary. A little Parmesan cheese completes the flatbread before it bakes for about 10 minutes.

The can of biscuits makes two large flatbreads, that will most likely be devoured quickly. The flatbread should be served warm, if possible. If there are leftovers (very doubtful), they should be put back in a 350° oven to reheat for just a few minutes.

8 Servings

1 16 oz. can jumbo refrigerator biscuits (such as Pillsbury Grands)

2 tablespoons olive oil
4 cloves garlic, finely minced
2 tablespoons fresh rosemary, finely minced

1 cup freshly grated Parmesan cheese
  1. Preheat oven to 400°.
  2. Line two large baking sheets with parchment.
  3. On a counter top or lightly floured surface, place four biscuits close together.
  4. Roll them into a 12" x 12" (approximately) rectangle, being careful to make sure they stick together.
  5. Transfer the rectangle to one of the baking sheets.
  6. Repeat with the remaining four biscuits.
  7. Brush each with the olive oil, sprinkle evenly with garlic and rosemary, and scatter the Parmesan cheese over the tops.
  8. Bake about 10 minutes or until crisp and golden brown.
  9. Serve Warm.
