Zürcher Geschnetzeltes, which literally means "sliced meat Zurich style," is usually made with veal, and is one of the most popular menu items in restaurants in Switzerland, especially those restaurants near Zurich. This dish is sometimes made with chicken instead of veal, and the chicken version is still called by the same name. The following recipe for Zurich Style Chicken can be made in about 30 minutes, and is fancy enough for company. It is traditionally served with Rösti, a crispy, delicious potato pancake similar to a giant hash brown. The sauce is also luscious over spaetzle, rice, or noodles.

If you prefer, you can use thinly sliced veal instead of chicken.

6 Servings

1 1/2 pounds boneless skinless chicken breast halves, cleaned and sliced in 1/2" wide slices
3 tablespoons flour

1/4 cup butter, divided
2 tablespoons vegetable oil

1 medium onion, chopped
2 cloves garlic, finely minced
1 tablespoon fresh sage leaves, coarsely chopped
1/2 pound sliced mushrooms
Zest of 1 lemon

1 cup dry white wine
2 teaspoons granular chicken bouillon
1 to 2 tablespoons fresh lemon juice

1 1/2 cups heavy whipping cream
  1. Toss the flour with the chicken strips.
  2. Heat 2 tablespoons of the butter and the vegetable oil in a large skillet over high heat.
  3. Add the chicken strips and quickly brown on all sides.
  4. Remove the chicken from the skillet and set aside.
  5. Turn the heat to medium, add the remaining butter, and stir in the onion, garlic, sage leaves, mushrooms, and lemon zest.
  6. Stir until the mushrooms begin to soften.
  7. Pour in the wine, turn the heat to high, and stir in the chicken bouillon and lemon juice.
  8. When the liquid has been reduced by half, add the chicken strips and stir for about 5 minutes - most of the liquid will be evaporated.
  9. Turn the heat to medium and stir in the heavy cream.
  10. Simmer the mixture for a minute or two until the chicken strips are just cooked through and serve immediately.
