Jennifer Trainer Thompson has truly outdone herself with her book, Fresh Fish: A Fearless Guide to Grilling, Shucking, Searing, Poaching & Roasting Seafood. Not only is it a primer for preparing basic fish and seafood, but it is full of mouthwatering recipes that are simple, but turn out perfectly. There are dozens of incredible side dishes, salads, and breads that are perfect accompaniments to the luscious seafood dishes.
Most of the recipes are simple to follow, and so far, those that I have personally prepared have turned out just like the pictures. The Bacon-Wrapped Whitefish with Charred Fingerling Potatoes was delicious, as well as the Cauliflower with Scallions and Currants. Both recipes have been added to my own recipe collection and will be repeated.
In this cookbook, there are recipes for several varieties of fish and shellfish such as Rhode Island Clam Cakes and Grilled Salmon with Tomato Basil Relish. Salads include Cranberry Cauliflower Walnut Salad and Lemon-Kale Salad to name a few. There is a recipe for Blueberry Lemon Ginger Scones, and several recipes for refreshing beverages. The desserts call for local ingredients such as cranberries and blueberries, and there is even a recipe for Cranberry Granola. Many of the dishes are pictured, and there are paragraphs with interesting information on types of fish, fishing, and other facts connected to the recipes.
All told, this is an excellent cookbook. The recipes are unique and innovative, but also give basic information on cooking many types of fish and seafood that are found in or near New England. It is definitely worth adding to the cookbook collection of anyone who enjoys fish and shellfish, and has enough variety and good recipes that it will be used again and again.
