Seasoned British food writer, Katriona MacGregor’s cookbook, Healthy Speedy Suppers proves that good, healthy food can be delicious, and also that it can be prepared in record time. This excellent cookbook contains recipes using simple ingredients – many that we usually keep in our refrigerator or on our pantry shelves – that can be easily put together for quick and tasty meals.

MacGregor has included a list of items to keep on pantry shelves, and suggestions for fresh foods to keep in the freezer and fridge; this is quite helpful, since it’s easier to prepare healthy meals when we don’t have to constantly stop at the grocery store, and when they are already on hand.

The dishes MacGregor has chosen to include in the book are very appealing, and, US readers will note, very British, making it fun to serve something a little different. The pictures are beautiful, and make it easy to see just what the finished dishes are supposed to look like.

The book is well-organized, includes pictures of most dishes, and the recipes are easy to follow.

There are several main dish salads to choose from, as well as side dishes. There are several good vegetarian dishes, too. A favorite main dish (so far) is the Paprika Pork and Peppers, which was a big hit with my family. The Chicken Puttanesca is also divine, as well as the Asparagus and Tarragon Risotto. The book includes stir-fries, Moroccan tagines, curries, and egg dishes; all can be made in about 30 minutes. With this excellent book, there is no excuse to serve frozen, boxed, or canned dinners; healthy food is almost as quick, and much, much tastier.
