15-Minute Grape, Banana, & Walnut Salad Recipe
Need a quick salad to serve with dinner tonight? 15-Minute Grape, Banana, & Walnut Salad is not only delicious, but it’s quick enough that even you have time to make it. The recipe was adapted from an Amish cookbook, Wanda Brunstetter’s Amish Friends Harvest Cookbook, which I highly recommend. The bananas and grapes in the salad are complimented by a blue cheese dressing and toasted walnuts. The combination is delicious, and the best part is that it can be put together in about 15 minutes. Toasting the walnuts brings out their flavor, but if you don’t have time, plain walnuts will work just fine. I toast the walnuts while I’m halving the grapes and slicing the banana; you can also toast them ahead. Since grapes and bananas are available year round, this salad can be made anytime.

The original recipe calls for green grapes, so you can use them instead of the red ones, although I think red grapes have a better flavor and are sweeter. The bananas should be on the green side, rather than extra ripe, so that the flavor doesn’t overpower the blue cheese and walnuts. If you happen to have blue cheese crumbles on hand, you can sprinkle a few on each serving for garnish. The salad is especially pretty served on lettuce leaves.

4 Servings

2 cups red seedless grapes, halved
1 large firm banana, sliced
1/2 cup toasted walnuts, chopped

Dressing:
1/4 cup blue cheese salad dressing
3 tablespoons light mayonnaise
1 tablespoon honey
  1. Mix the grapes, bananas, and walnuts in a small serving bowl.
  2. Whisk together the dressing ingredients and stir into the fruit mixture.
  3. Serve immediately.
