Beverly LeBlanc, who is a veteran cookbook author, has recently published I Love Soup. The book contains recipes for some of the regular, run-of-the-mill soups that most are familiar with, but it also contains recipes for unique soups from all over the world. The variety of soups is impressive, and most of the recipes are fairly easy and have minimal ingredients.

The Thai Red Curry Chicken Soup is very good, easy to make, and reminiscent of a favorite curry I make often at home. The Thai Meatball and Coconut Soup is also very good. Since I had lots of tarragon in my herb garden, I tried the Cream of Chicken Soup with Tarragon & Lemon – Yum! The Portuguese Caldo Verde is one of the best versions I’ve tasted.

Besides good recipes for soups using chicken, sausage, pork, and beef, LeBlanc has included recipes using venison, pheasant, and even duck. There are recipes for South American soups, Caribbean soups, American Soups, Mexican Soups, European Soups, and Asian soups.

Unfortunately, every soup isn’t pictured, however, the pictures that are in the book are nice, and will give cooks an idea of how their soup should look. The book is well-organized, the index comprehensive, and the recipes are well-written and easy to follow.

I Love Soup is a cookbook to cook from; it isn’t a cookbook to sit down and read for pleasure. The recipes are presented, but no background, no stories, and no explanations before the recipes; it would be nice to know how a certain soup came about, or why it is popular in a certain region, or if something could be substituted – you get the picture. While there are great recipes, the book is essentially a bunch of recipes with no personality of the author coming through – a laundry list, if you may.

Nevertheless, I Love Soup has at least one, but probably a dozen soups that will appeal to everyone. If you love soup, this book is definitely recommended.
