Raghavan Iyer has published an excellent cookbook, Smashed, Mashed, Boiled, and Baked--and Fried, Too!: A Celebration of Potatoes in 75 Irresistible Recipes, and it is one of those rare books that has dozens of innovative and mouthwatering recipes that real people will actually want to prepare and eat. While there are dozens of good cookbooks dedicated exclusively to potatoes, this is, hands down, one of the best. Potatoes will soon become an unexpected star of many meals to come.
Iyer, a celebrated cook and author, has included recipes with flavors from all over the world, such as Persian Style Potatoes and Eggs, Potato Pierogies, Dukkah Rubbed Potatoes, and Locro De Papas - Peruvian Potato Soup. While there are recipes for some of the simple, but beloved potato dishes such as hash browns and mashed potatoes, the ethnic recipes from around the world will generate interest and kudos wherever they are served. There are potato appetizers, potato soups, potato salads, potato main dishes, and even potato desserts.
The author has included helpful tips throughout, as well as beautiful pictures of the recipes. The recipes are organized and easy-to-follow, and there is a chapter on choosing the proper potato (with pictures of each variety) for each recipe, storing, and preparing potatoes for different dishes.
This is the best book out there for potato lovers. It should be included on every cookbook shelf and will be used again and again when potatoes are part of the menu. Highly recommended, this book will keep everyone cooking new potato dishes for months to come.
