Fancy varieties of salt have been all the rage for the last several years. Many of us purchase different kinds, then aren’t sure just what to do with them. Bitterman's Craft Salt Cooking: The Single Ingredient That Transforms All Your Favorite Foods and Recipes is an innovative book that includes mouthwatering recipes using different salts. The book features appetizers, main dishes, salads, side dishes, and desserts. The book even has rubs and spice mixes (salty of course) to roast a turkey or chicken.

Avocado Toast is especially trendy, and Bitterman’s recipe is absolutely delish. A new favorite is his recipe for Heritage Pork Chops with Red Salt and Black Salt Roasted Corn Relish – sounds complicated, but is actually quite easy. In fact, most of the recipes are fairly easy, and come with easy-to-understand instructions. The Salt Chip Chocolate Chunk Cookies have little crunchy pieces of salt; they are, however, not too salty – there is a nice mingling of the sweet cookie, the gooey chocolate, and the salt. The only thing I would change is to quadruple the recipe so we have enough of them (the recipe only makes 24).

So far, every recipe has turned out great, and while there are nice pictures of the different salts and some of the dishes, it would have been nice if there was a picture of every recipe. The recipes are innovative and unique – nothing boring.

This book includes charts naming different kinds of salt and what foods each kind should be used on. There is a chapter that tells everything anyone might want to know about salt production, in-depth information on many different varieties of salt, and the main three rules of salting.

Mark Bitterman is the undisputed king of everything salt, so it stands to reason that his cookbooks will be full of everything we might need. Tomorrow we are having Fleur de Hell Fried Chicken, and I’m dying to make the Arugula Pizza with Blue Cheese, Prosciutto, and Crispy Salt, as well as the Ricotta Pancakes with Vanilla Salt. If you love to prepare trendy food that is a cut above and actually tastes good (and a little salty), this is a book for you.
