How to Instant Pot: Mastering All the Functions of the One Pot That Will Change the Way You Cook by Daniel Shumski is the perfect companion to the multi-cooker craze that is sweeping the nation. Instant Pot is apparently the most popular brand, but there are dozens of other brands of multi-cookers that have similar functions and work equally well. This cookbook is geared toward the Instant Pot brand, but the recipes work perfectly in several of my multi-cookers put out by other manufacturers. The pictures are great, too, although there isn’t a picture of every recipe.

This cookbook is well-organized according to function and presents a Master Method (basic recipe), then gives several ways to use what was cooked or unique variations. For instance, there is a recipe for Quick Pressure Cooker Pork Shoulder as the Master Method recipe using the pressure cooker function, then a Barbecue variation, as well as a teriyaki variation and a salsa variation.

There are basic recipes for polenta and risotto, along with variations, as well as dry beans with unique ways to use them once cooked. Shumski presents an excellent Basic Stock recipe which can be used in recipes in the book and also any recipe you may have that isn’t in the book that calls for homemade stock.

The Slow Cooker section has excellent recipes: Korean-Style Short Ribs with Garlic and Ginger, Garlicky White Bean Soup with Crispy Pancetta, and a Faux Cassoulet to name a few. The instructions are succinct and easy to follow for cooks of all levels.

All told, How to Instant Pot: Mastering All the Functions of the One Pot That Will Change the Way You Cook is one of the best cookbooks on the subject and is highly recommended.
