Having owned an electric smoker for several years, I was excited to see Electric Smoking Cookbook for Beginners: 100 Essential Recipes to Master the Basics by expert Chef Jonathan Collins. Previously I have smoked briskets, ribs, and a few other things, but I really didn’t have any recipes for spectacular smoked dishes. Collins has a wonderful imagination, and includes in this cookbook dozens of recipes for use in the smoker that most of us wouldn’t think of making. The recipes are mouthwatering, and those I have tried so far have turned out to be picture perfect. Unfortunately, I have had to take my own photographs of the dishes, since this cookbook has only a few; it definitely needs more. However, the instructions are succinct and easy to follow. The early chapters in the book are very helpful and explain how to smoke almost everything in an electric smoker.

One of the things I was excited about was to make smoky beans in my electric smoker. Collins has included two recipes that I wanted to make, and unfortunately, both recipes call for “beans,” but don’t specify whether the beans are dried, cooked, or fresh. I just guessed, and used cooked beans, but the book needs to let readers (especially beginners) know what kind of beans to use.

There are so many fabulous recipes in this book that my cooking queue keeps getting longer; it’s doubtful that I’ll even finish by the end of summer. This cookbook is perfect not only for those who are just learning to use their smoker to advantage, but for anyone who loves smoked food and wants to expand their repertoire. You can’t go wrong with this cookbook.
