Recipe for Chocolate Chip Zucchini Bread

This is a delicious recipe for zucchini bread with chocolate chips and nuts. It makes two large loaves, so you might want to freeze one to enjoy in the future, or share one loaf with a friend.

Ingredients:

3 cups grated zucchini (Use a large box grater or a food processor.)
3 cups sugar
1 1/2 cups Canola oil
4 eggs
3 cups flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1 tsp salt
1 cup walnuts
2 cups chocolate chips


Directions:

  1. Preheat the oven to 350 degrees

  2. Grate 8-9 large zucchini until you have three measured cups of grated zucchini. (Note: Leave the skin on the zucchini.)

  3. Mix the sugar, Canola oil and eggs until well combined.

  4. Add the grated zucchini and stir.

  5. In a separate bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.

  6. Add the flour mixture to the zucchini mixture, and stir well.

  7. Add the walnuts and chocolate chips. Stir until combined.

  8. Bake at 350 degrees for 50-60 minutes, or until a toothpick inserted in the middle comes out clean.

  9. Enjoy!!!
