Fondue Anyone? Fondue has made a big comeback since the 70’s when olive green and harvest gold fondue pots were all the craze. Not only do the pots come in palatable colors and also stainless steel, the actual fondue that goes in them can be made in dozens of delicious varieties. This Shortcut Italian Fondue starts with Italian Meat Mix made from the Basic Italian Meat Mix Module, which can be made months ahead and stored in the freezer. Just four other ingredients are added to this delicious fondue before transferring it to a fondue pot where it’s served with bite-size pieces of crusty bread; Honestly, what could be easier or faster?

Kids love fondue, and while it does contain some red wine for flavor, the mixture is cooked thoroughly so that any alcohol cooks out. When serving kids, if it is necessary to thin the mixture down once it’s in the fondue pot at the table, just stir in some beef broth made from a bouillon cube rather than extra wine.

8 Servings

2 cups Italian Meat Mix from the Basic Italian Meat Mix Module
1 26 oz. jar spaghetti sauce
1 cup red wine
4 cups grated mozzarella cheese
1 cup freshly grated Parmesan cheese

1 loaf crusty French or Italian bread

  1. Mix the Italian meat mix, spaghetti sauce, and red wine in a large saucepan.

  2. Bring to a boil over medium heat, stirring to mix.

  3. Turn the heat to low and stir in the cheese gradually until all is melted.

  4. Transfer the mixture to a fondue pot.

  5. Meanwhile, cut the bread into 1 to 1 1/2 inch cubes making sure there is a crust side to each piece.

  6. To serve, spear a piece of bread with a fondue fork and swirl it in the fondue.

  7. Note: If the fondue gets too thick, stir in a little more red wine or beef broth.
