Slow Cooker Chile Verde Chicken Recipe


Slow cookers are an absolute lifesaver for anybody who’s busy, and nowadays, who isn’t? Almost everyone owns at least one or two, and since they come in so many different types and sizes, there is a perfect one for every lifestyle. Creamy Chile Verde Chicken can be assembled and put in the slow cooker in about 10 minutes hands-on time; it has minimal ingredients and is served over rice (which can be made quickly in the rice cooker while the table is being set). Bread or fresh tortillas are great to soak up the extra sauce, and if there’s time, a tossed salad or microwaved vegetable completes the meal.

Boneless, skinless chicken breasts are called for in this recipe, but boneless, skinless thighs can be substituted if dark meat is preferred.

6 Servings

6 boneless skinless chicken breast halves, cleaned of all fat, veins, etc., and halved
1 8 oz. package softened cream cheese
1 10 oz. can tomatoes and green chilies, such as Rotel
1 4 oz. can diced green chilies
2 tablespoons chopped fresh cilantro

2 tablespoons flour
1/2 cup water
  1. Place the chicken pieces in the bottom of a 2-3 quart slow cooker.

  2. Whisk together the remaining ingredients; pour over the chicken.

  3. Set the slow cooker to low and cook 4-6 hours or until the chicken is just cooked through.

  4. Mix the flour and water until smooth; stir into the sauce to thicken.

  5. Serve over rice.
