Mini Meatloaves

To save baking time, instead of making one large meatloaf, make 4 small meatloaves, each made with about 1/2 pound ground beef. Here's a great recipe for tasty barbecue sauce topped mini meatloaves.

  • 2 lbs. lean ground beef
  • 1 egg, lightly beaten
  • 1/4 cup milk
  • 1/4 cup bread crumbs
  • 1 large onion - minced
  • 1/4 cup grated Parmesan cheese
  • 1 T. Worcestershire sauce
  • 1 T. all purpose seasoning
  • bottled barbecue sauce

Preparation -
In a mixing bowl, combine the ground beef, egg, milk, and breadcrumbs. Using your hands or a large wooden spoon, mix the ingredients into the ground beef. Add the remaining ingredients except the barbecue sauce. Mix all the ingredients evenly into meat. Divide the meat mixture into 4 small loaf pans. Generously brush barbecue sauce over each small meatloaf. Bake in a preheated oven at 350° for about 40 minutes or until the temperature reaches 160° in the center of each meatloaf
