Baking Mix (use instead of Bisquick®)

Preparation -
Mix the flour, baking powder, sugar, salt, and cream of tartar together until well blended. Add the non-fat dry milk and mix again. Using a pastry blender or two knives, cut in the shortening until it's thoroughly mixed into the other ingredients and the mixture is the consistency of cornmeal. Store in an airtight container, at room temperature, up to 3 months.

Use in recipes instead of a brand name baking mix. For basic biscuits, combine 2 cups baking mix with 1/2 cup water or skim milk. Mix just until the dry ingredients are moistened. Knead on a floured surface, turning over 8 to 10 times. Roll the dough to about 1/2" thick. Cut with a 2" to 2-1/2" biscuit cutter.
