Frozen Mint Parfaits Dessert Recipe
Frozen Mint Parfaits These frozen parfaits make a great St. Patrick's day dessert. Crème de menthe is an optional ingredient, but if you don't use this green liqueur, add about 6 drops of green food coloring.- 2/3 cup sugar
- 1/2 cup egg substitute
- 1/4 tsp. mint extract
- 3 T. green crème de menthe - optional
- 2-1/2 cups frozen whipped topping, regular or light - thawed and divided
- 1/4 cup finely crushed Oreo® cookies
- 4 fresh mint leaves for garnish - optional
Preparation - In a mixing bowl, using an electric mixer, whip the sugar and egg substitute together until light and fluffy. Mix in the mint extract and crème de menthe (if using). If you don't add the crème de menthe, add about 6 drops of green food coloring. Fold in the thawed whipped topping and cookie crumbs. Spoon the mixture into 4 freezer-safe parfait glasses or other tall freezer-safe glasses. Place the filled glasses in the freezer and freeze for at least 6 to 8 hours before serving. Just before serving, top each one with a dollop of whipped topping. Garnish with fresh mint leaves, if desired.
