When I buy mini-pumpkins for decorations, I hate to throw them out. So, they sit around the house until they develop spots, then I chuck them into the trash or compost bin!

What can you do with those mini-pumpkins after they have served their time as decorations? Turn the mini-pumpkins into a delicious soup that will elevate a sandwich to a soul-satisfying meal. This is a delicately flavored soup that does not rely on spice for taste. It is comfort food at its best.

I think that this soup would be perfect for holiday entertaining. Serve it with Sausage-Cheese-Biscuit Balls; you know those tasty little baked snacks that are hard on the arteries, but so yummy? I am developing a new recipe, and I'll put it in the forum. These Sausage-Cheese-Biscuit Balls aren't quite sandwiches, so I think that the forum would be a good place for them!
