Beer Fox Tip of the Week

Speaking of Cuisine a la Biere...when adding beer to a sauce, be sure to add it when the sauce is very hot, but not boiling. This will reduce the alcohol in the beer, while allowing the malty and/or fruity flavors of the beer to shine through. Hoppy beers can be used in very spicy sauces and can add a distinctive zest that wows the palate. Malty beers work better with meaty dishes, while lighter wheat beers add zest to seafood and poultry.

The Great American Beer Festival is listed as one of the top 1,000 places in the US to visit before you die. Tickets for this year's festival went on sale to the public June 1. Tickets for the Saturday Members-Only session have sold quickly with 42% of the tickets already sold. Thursday – Saturday evening sessions have already climbed to around 20% sold. Info at:

Craft Beer of the Week Award

Cuvee Delphine, De Struise Brouwers, De Panne, Belgium
Style: Russian Imperial Stout - 13.00% ABV

Artwork on the label by Delphine Boel exclaims, "Truth Can Set You Free." The legend behind this beer is that this is the same recipe as the evil Black Albert, Batch 0, aged in Four Roses bourbon barrels. It was originally to be called "4 Black Roses," but Kentucky warned them not to.

Her body shines like inky obsidian in the glass with sticky tan head, painting the glass with strings and swaths of lace that have incredible staying power. Aromas are like chocolate drenched dark fruits, dipped in whisky and served on a plank of aged wood. As it hits the tongue, the palate sings between the thrill of the heat and her effervescent liveliness. Dark chocolate, apples, licorice and molasses merge together in an earthy funkiness and oaky heaven. A roasty, dry finish adds to the pleasure.
