Greeting from the Land of OZ!

Many of my articles come from events in my own life. We buy a lot of celery to use in our breakfast smoothies, salads, and soups. Sometimes, we have a celery build-up, where we have most of a bunch of celery that needs to be used. It's kind of old and all limp, so I don't want to use it raw. Of course, if I wanted to crisp it up, I could always put some cut stalks into a glass of water and let Mother Nature take action. The water goes up the vessels in the stalk and the water diffuses into the cells to plump them up. Science lesson over! Anyway, with so much celery, I decided to create a soup that would be delicious with seafood sandwiches.

Make Creamy Celery and Mushroom Soup! It tastes great, and the prep time is minimal. Cooking the veggies takes about half an hour. You can do other work while it's bubbling merrily in the pan. Finish the soup in a couple of minutes by whisking ingredients into the broth. Voila, you have soup!
