Using an Atkins or other low carb tortilla, you can make an INCREDIBLY tasty quesadilla that is perfect for your low carb diet! I really, really enjoy this recipe.
4oz Mexican cheese blend
2 low carb tortillas
1 Tbsp salsa
2 Tbsp canola oil
I use the green onion tortillas for this but you can use whichever flavor appeals to you most. Lay out one tortilla and spread the cheese over it. Put it in the microwave for 45 seconds to melt it. Add on the salsa and then layer on the top tortilla.
Heat a frying pan and add in the canola oil. Put the quesadilla in the pan and sprinkle some oil on top. Fry a few minutes on each side until crispy.
Chop into sixths and enjoy with sour cream!!
Note these carbs are a bit high to make it an induction snack, but I have this for dinner as a normal low carb meal and love it.
