Spring is here and we begin to think about golf and how to prepare ourselves and our golf equipment for the golfing season. When checking out your clubs maybe you need to have them re-gripped as through a hot summer last year I am sure many of those often used clubs should up-dated. Check with your Pro Shop for their recommendations on re-gripping the clubs. Your golf shoes many need a good cleaning and replacing those that show lots of wear.
It is not only the golf equipment that needs a quick energy up-lift but we all could use some extra energy going into spring and summer. I have been into the cookie making for the past several years and have come up with a quick energy cookie that you can take with you on the golf course to renew your energy during your 18 hole rounds. I have been bringing containers of cookies to the pro shop each week to help keep up their energy and stave off hunger pangs during those long days. They seem to love them as they let me know when the container is empty and which ones they like the best.
One day at our grocery store I run across Ruth from the grill and asked her what she was shopping for. She said cookies for the men who come in on Sunday morning for coffee and cookies. I told her to forget that I will bring her cookies each week. I guess they enjoy the homemade cookies as they seem to disappear fast. Sometime golfers who walk by help themselves to any extras. So I am always on the lookout for new cookie recipes. This is one I developed from my old energy bars recipe.
Peanut Butter Energy Balls
1 cup peanut butter – creamy or chunky
1 cup honey
2 cups non-fat dry milk
Mix and stir all together until well combined
1 cup ground nuts fine – I used English Walnuts
1 cup sun flower seeds
˝ cup flax seeds
1/2 cups bran flakes
˝ cup wheat germ
1 cup dried cranberries
You can substitute other items you have on hand such as rice Krispy Cereal, chocolate chips, coconut flakes and mix this until well combined. Test if ingredients are too sticky add more extras that you enjoy. Roll this into small balls like a large marble not golf ball size. From my batch I had about 60 small balls. These then can be rolled in powdered sugar, coconut flakes, more ground nuts or I used melted dark Scharffen Berger bittersweet chocolate and dipped each ball in the chocolate. I would recommend chilling or freezing the balls before dipping in chocolate.
These Energy Balls will soften at room temperature so should be kept in the refrigerator and will last for a long time. I also keep containers of them in my freezer and then take a few with me when I play golf. There is plenty of energy in them to give you a good kick and keep you going the rest of the game. When I develop more energy boosting cookies will keep posting them to give you all a lift on the golf course.
