Spinach Mushroom Wrap RecipeSpinach is incredibly healthy, and also quite easy to grow in your back yard. Here's a delicious spinach wrap recipe that is full of nutrients! Ingredients - 10 spinach leaves 1 8oz can mushrooms 1/2 cup corn 1/4 cup canned tomato chunks dash salt dash pepper 2 low carb wrap 1/4 cup shredded cheese Rip up the spinach leaves and put them in a bowl. Mix in the mushrooms, corn, tomato chunks. Sprinkle in salt and pepper. Now lay out the wrap. Draw an imaginary line off-center down the wrap. Spoon your mixture down the wrap. Begin rolling from the end closest to that line, tucking in the two ends as you roll so you end up with a burrito shape. Sprinkle the cheese on top. Microwave for 4 minutes on 50%. I eat mine warm with sour cream, but you can also slice the wrap in half and eat both halves as 'pockets' when it cools down a bit. NOTE - the corn is sweet, yes. If you're on induction you might bypass the corn and substitute in broccoli instead. Servings: 2 Carbs per serving: 9g
