Cauliflower Rice with Veggies Recipe
This cauliflower recipe doesn't require cooking and ends up being like rice with veggies. Tasty, good for you, and easy! Just blend and serve!

Note that this is going to require 15 minutes of "settling" time - so plan ahead when you're doing this recipe.

Ingredients:
3 cups cauliflower florets
1 cup broccoli
1/2 cup green pepper
1 green onion

Sauce:
1 clove garlic
1/2 lime
1 tsp sesame oil
1/4 tsp ginger
sesame seeds

Start by making the rice. That means you put a cup a time of the cauliflower florets into your blender and pulse them into rice-bits. If you don't have a blender you could do this manually with a knife.

When the rice is done, put it into a bowl. Chop up the broccoli, green pepper, and the tops of the green onion. Add those all in.

Now it's time for the sauce!

Start by mincing the garlic and squeezing the lime. Then add in the sesame oil, ginger, and sesame seeds. Chop up the bulbs from the green onion and toss those in as well.

Mix the sauce thoroughly into the riced cauliflower mixture. Stick it in the fridge for fifteen minutes.

Makes 2 servings

Carb Values
The 1 1/2 cups of cauliflower get you only 7g of carbs. Add into that the 3g from the broccoli and you've got a delicious, nutritious meal for about 10g of carbs total.

Depending on where you are in your low carb process you could add in nuts, celery, red pepper, jalapenos, or any number of other things. It's all up to you, your taste buds, and you weight loss or maintenance goal. I love garlic so I enjoy ramping up the garlic. Others might prefer to add in cayenne pepper or other spices.
