Sparkly Lime Cranberry Sauce Recipe
Cranberry sauce comes in dozens of varieties; it’s very quick and easy to make, and is one component of a holiday dinner that can be made ahead. Sparkly Lime Cranberry Sauce is an almost clear, jellied sauce with a distinctive lime flavor. There are only four ingredients, and preparation is quick. The finished sauce jells as it chills, so it can be poured into molds, and unmolded onto a serving plate.
Sparkly Lime Cranberry Sauce can be used as part of a quick, but festive appetizer, topping a block of cream cheese and served with crackers, or as a topping for goat cheese. Since it’s a great red color, it can be used as the stripes on a candycane shaped cheese ball. It’s also used to top Miniature Cranberry Lime Cheesecakes, a recipe on the Desserts Site. It’s great swirled into cream cheese frosting on a cake, or used as a filling between layers. There are endless uses for this delicious and different cranberry sauce. After you’ve tasted this, you’ll never serve the canned variety again.

4 1/2 cups fresh cranberries, (3 12 ounce packages)
1 12 oz. can frozen limeade concentrate
3/4 cup water
2 cups sugar
  1. Place the cranberries in a colander and rinse well; drain and transfer to a large saucepan.
  2. Stir in the limeade concentrate, water, and sugar.
  3. Bring to a boil, turn down to a simmer, and let cook until the cranberries have burst, 15-20 minutes, stirring occasionally.
  4. Pour the mixture into a fine strainer set over a large bowl.
  5. With the back of a spoon, press the cranberries through, leaving seeds and skin in the strainer.
  6. Discard the solids, whisk the mixture smooth.
  7. Pour the mixture into a bowl or several round molds. The sauce will thicken as it cools. Refrigerate until serving.
