Fruit Streusel Muffins

Fruit Streusel Muffins

**Streusel Topping**
1/3 cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 tablespoon light butter -- room temperature

**Muffins**
2 cups Self-Rising Flour
1/4 cup sugar
1 cup milk
3 tablespoons oil
1 egg
1 can pie filling (your favorite flavor)


Heat oven to 425 degrees F. Grease 12 muffin cups. In medium bowl, combine
flour and sugar; mix well. In small bowl, combine milk, oil and egg; blend
well. Add to flour mixture; stir just until dry ingredients are moistened.
(Batter will be slightly lumpy.) Fill greased muffin cups 1/2 full. Place
one tablespoon pie filling in center of dough. Mix together streusel
topping ingredients and sprinkle over the top of muffins. Bake at 425
degrees F. for 18 to 20 minutes or until golden brown. Serve warm.


The muffin recipe can be made up and the pie filling omitted to make plain
streusel muffins. Just bake as the recipe states.
