Baked Blueberry Oatmeal Recipe
One recipe I’ve made that even my super picky 6-year-old will eat is one for baked blueberry oatmeal. It’s easy to make, with ingredients most people have on-hand and can easily be tweaked to vary the taste, sugar amount and size.
1 ½ cups milk
½ cup plain yogurt
1 tsp pure vanilla
2 Tbs brown sugar
1 tsp cinnamon
3 cups oatmeal (quick cooking or regular)
2 cups blueberries (fresh or frozen)
Preheat oven to 350 degrees F.
Grease an 8x8 baking dish or casserole. In medium-sized bowl, combine milk, egg, yogurt, vanilla, brown sugar, cinnamon and oatmeal.
Place 3/4ths of the mixture into the baking dish. Layer berries on top of the oatmeal mixture. Layer the remaining oatmeal mixture over the berries.
Bake on center rack for 30 minutes or until top starts to brown and oatmeal is bubbling. Remove from oven and let rest about 5 minutes.
Serve in shallow bowls.
There is so much you can do to this recipe to change it. You could have a different flavor oatmeal for breakfast every morning for a month!
If you don’t have any yogurt on hand, try it with unsweetened apple sauce instead. Use canned pumpkin with pumpkin pie spice instead of cinnamon. You could use maple syrup or honey in place of the brown sugar for a different flavor. It will change the consistency a little, too.
Of course, you can always change the fruit; add a mixture of berries or fresh peaches. Make an apple pie oatmeal. Cherries work really well, too, although after pitting, I sprinkle them with a little sugar to balance out the tartness.
