Molten Cherry Chocolate Cake Recipe

Style: Schwarzbier – Intensely Black in color – An intricate blend of complex malts, coffee, caramel and chocolate, with a delicate crispness and lingering chocolate finish.

½ lb. butter
8 oz. Sprecher Black Bavarian
3 squares dark unsweetened bakers’ chocolate
2 C. flour
2 C. granulated sugar
1-1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon baking powder
2 eggs
4 oz. sour cream
2 teaspoons vanilla extract
2 tablespoons maraschino cherries, sliced or chopped
Chocolate Fudge Frosting (prepared)

Preheat oven to 350 degrees. Lightly grease two 8-inch springform pans and dust with flour.

In microwave proof bowl, heat butter and bakers’ chocolate until butter and chocolate are melted, stirring every 60 seconds. Add 8 oz. Sprecher Black Bavarian and stir thoroughly to blend.

In a large mixing bowl, sift together dry ingredients – flour, sugar, baking soda, salt and baking powder. Add the melted beer-butter mixture, and blend thoroughly with electric mixture until fluffy.

Add eggs, one at a time, beating thoroughly after each addition. Add sour cream and vanilla.

Pour batter in even portions into prepared springform pans. Bake in 350 degree oven for 35-40 minutes, or until toothpick inserted in center comes out clean. Cool on wire rack. Cool completely. Remove the sides of pans.

Flatten tops of cakes, if needed, by cutting with a long serrated knife. Lightly spread chocolate fudge icing on layers. Sprinkle evenly with maraschino cherries. Place layers together. Generously slather top and sides with icing.

Variation: Garnish top with decorative swirls of chocolate icing and whole maraschino cherries.
